Ned’s Baby Back Ribs
Ingredients:
- one package of Costco’s baby Back Ribs (3 fourteen rib racks)
- two large Vidalia or yellow onions
- two large oranges
- 3 liters of Red wine
- 1 pint orange juice
- Grey Poupon Mustard
- Bar-B-Que Sauce (your favorite)
- Salt and Pepper
Marinate the Ribs
- cut the racks in half, rinse in cold water. Dry with paper towels
- sprinkle liberally with salt and coarse ground pepper
- cut the oranges and peeled onions in half and cut into medium slices
- Place ribs in layers in a deep plastic container layering with onions and oranges and one cracked
- bay leaf per level
- Pour in red wine and orange juice to cover
- Cover the top of the container with clear wrap … refrigerate overnight
Cook the Ribs … pre-heat oven to 325°F
- layer the bottom of a roasting pan with onions and oranges from the marinade
- place the ribs, bone side down, on top of the oranges and onions, overlapping slightly
- slather mustard on the ribs and spread to thinly cover them
- cover the ribs with another layer of onions and oranges
- pour some of the marinade liquid into the pan but do not immerse the ribs
- cover the pan tightly with aluminum foil
- place the pan in the oven and cook for 2 hours
- Remove pan from oven, let cool and refrigerate for two hours or overnight
Bar-B-Que the Ribs … preheat the grill to a medium temperature … it should not be blazing hot
- remove the ribs from the pan and slice … they are best when they have been refrigerated and the fats have coagulated
- place the sliced ribs back in the pan and liberally cover with your choice of bar-b-que sauce … use your hands to mix them in the sauce and make sure they are well covered and let them sit in the sauce at least 60 minutes so they warm to room temperature
- wash your hands
- reduce the grill heat to low and place ribs on grill and cover the grill. Do not walk away as you are in active grilling mode now.
- Check after a minute or so and make sure they are not burning … turn as necessary and cover again … and continue this method for approximately 10 to 15 minutes while mopping them with more sauce if you desire. Grill until the ribs are hot … remember you are just heating them up and not cooking them.
Serve with Cold Beer and Rosé … Enjoy!!!!
