Gazpacho - La Ola - 01

Gazpacho

Chop in a food processor:

2lbs      tomatoes (cored)

 

And then chop in a food processor:

1 med   cucumber  or two small Kirby Cukes (peeled and seeded)

1 ea      red pepper Cored and seedless)

7 cl       garlic

1 med   onion

 

Combine the above chopped ingredients in a big mixing bowl (with a spoon or whisk)

 

And, blend with the ingredients below:

7 tbsp   lemon juice or vinegar

1 cup    extra virgin olive oil

2 cups  water (iced)

Salt and Pepper to taste

 

If you want it more red, add tomato juice or canned chopped tomatoes.

Refrigerate at least 2 hours but preferably overnight.

 

Serve cold in a stem glass topped with Garlic croutons.
